Dehydrated means dry. That’s one of the oldest methods to prepare and storage food for winter. Of course the best made is in the sun and wind. For that you need lovely Country with dry sunny summer. I live in UK so if we have got a week without rain you can say it’s lovely summer. I wrote before about dry tomatoes. It was the first think I did in the dehydrator. Now I do everything. I did beef jerky. I bought around 0,5 kg of beef meat in one peace. I choose the cheapest one because I didn’t want to spend to much on it. I cut all the fat, put into the freezer for around the hour. You put the meat in the freezer not to completely freeze it but to only make more still when you cut the slices. It’s just easer to cut the meat when it’s little freeze. I cut it in slices and put in marinates.
My first marinates was sugar,salt, pepper, colendra, paprika, chilli,cumin. I put marinates on every slice of beef and leave for a day, then place them in dehydrator and dry it for around 12-14h. You just need to check and change the trays in it. From bottom to top.
The second marinates was salt, pepper, paprika, chilli, Zatar mad cumin.
Third was salt,pepper,paprika,sumac.
You can try different variations of spices on the beef before dehydration the meat, it basically depends on what you like.
on the photos you can see the piece of beef that I bought, I just cut off all the fat from it. :_))
mix the spices, and you can decide by yourself what type you want.
put the spices on cut beef and marinated for at least few hours
put to dehydrator for 12-14 hours, you need to check it. I as well every 3-4h turn it over.
and beef jerky is ready, storage it in closed jars or plastic bags but don’t let it be outside. it will last you for 6-8 months in dry place. enjoy
