Lemon mini bundt

I love bunt or marble cake it’s similar at least for me. I never did it in last years because of memory I had. 15-20 years ago that’s the time I did it with my mum. You need to know that was the time when hand or strand or any mixer was just a dream. You depend only on your hand and your strength. I loved the cake but my mum was smart- you like it! you will help me do it!. So poor me, I always fell sorry for myself (more for my arms ;-))) to do it in that time we use stone bawl especially for it. It take ages at least in my kid mind. Now it takes around 7-10 min in mixer. If you have got stand mixer it’s even easier you just wait a until butter is mix well with sugar. It need to be smooth. Like my mum always check if she feel sugar in butter in her teeth it wasn’t ready.
The old fashion stone bawl looks like that. Maybe you remember your grandmother had one.

For the lemon mini bundt I used
2 and 2/3 cups of flour
1/2 tsp baking soda
1/4 tab salt
1 cup unsalted butter (room temperature,easier to mix with sugar)
1 and 3/4 cups of sugar
1 tbsp seated lemon zest
4 large eggs
1 cup and 1 tbsp natural yougurt
3 tbsp milk
5 tbsp lemon juice

I prepared 3 bowls. I don’t have strand mixer, so if you have it u will need 2. In one I mixed dry ingredients flour, baking soda and salt and put aside. It was ready and steady for later. In other bowl I mix yogurt with 3 tbsp of milk and put aside as well ready and steady.
Because I don’t have standing mixer yet in third bowl I put butter and half of sugar mix for 2 minutes and add rest. Mix for at least 5 minuted. If butter isn’t soft enough you won’t see progress, so I add 1 teaspoon of oil just to add some kick to the butter to help it mixing process with sugar. When the mixture was almost smooth. Like I wrote before just try it if you still fell sugar in your teat hits not ready. Mix and mix it. After 7-8 minutes after trying it I add eggs one at the time and mix it with butter.
When the butter with eggs was ready I add 2 tablespoon of flour mixture and 1 tablespoon of yogurt mixture and mix it. I mix it by hand you can put mixer in slow and add it until all flour and yogurt is corporate into butter. After that I add lemon juice and mix it.
Put it into mini marble tins or muffins. I have got mini mini bundt and muffin tins. I get 12 mini bunts and 20 muffins. Bake in temperature of 180 degree for 15-20 minutes . Let it rest a little time in the tins and take it over.

like I wrote before i add flour and yogurt and mix it by hand, if you got stand mixer just add spoon by spoon and mix in low speed
